1 cup Nadamoo Lotta Mint Chip ice cream
2 Tbsp melting chocolate (we used Love Bean)
1. Freeze baking sheet for 30 min prior to starting. Place wax paper on top of baking sheet and spray with olive oil. Scoop Lotta Mint Chip into small balls using a melon scooper or spoon. Place toothpick in the middle of each ball. Set on wax paper with two inches between each ball. Freeze for 1 hour.
2. Heat chocolate in microwave according to package instructions. Once chocolate is entirely melted and has a smooth consistency, remove the baking sheet from the freezer. Spoon chocolate over ice cream ball, so it coats the entire outside. Quickly pick up ball and let chocolate spread to the bottom. Complete this process quickly. Place in freezer immediately for 30 min. Remove toothpicks and enjoy!
