As far back as I can remember, my sister Katy had problems with both seasonal and food allergies.
When she moved to Austin – live music and allergy capital of the world – her seasonal allergies became a serious, year-round problem. Katy’s doctor wanted her to get allergy shots, a program that would last for 2-5 years but might not bring relief. Katy decided to work with a nutritionist instead and changed her diet to eliminate underlying food sensitivities. Poor Katy had to go a long time without some of her favorite foods, like wheat, dairy, sugar, chocolate; many of you know the routine.
At that time, I was an aspiring pastry chef and baker. Throughout the diet experiment my sister would ask me, “Can you make this without that?” and I would give it a try. There were some hits and a lot of misses, but eventually I caught on to how to use healthy, alternative ingredients in traditional dessert recipes. It was such a joy to share these new creations with Katy and make her path to health a little sweeter.
Katy’s allergies gradually disappeared, and today you’ll hear hardly a sneeze or sniffle from her. I was so inspired by the experience that I changed my career track. I went back to school, studied nutrition & natural foods cooking, and became a natural foods chef and chef-instructor at a natural foods cooking school in Austin.
In May 2004, I came up with the NadaMoo! recipe, and that summer I made it with my friends at The Daily Juice. It became so popular that my friends at Whole Foods asked me to put it into pints. And now here we are!
My friends and family call NadaMoo! "Ice Cream for Everyone" because they can enjoy it without any guilt. And now that I put it in pints, you can too — whether you have special dietary needs, like my sister, or, like me, you simply love great-tasting & natural foods.
