1 cup NadaMoo Creamy Coconut ice cream
1 cup chopped pineapples
1/2 cup chopped pineapples
3 cups granola
1 ½ cup coconut milk
1. Preheat oven to 350 degrees. Remove ice cream from freezer and let thaw for 15 min. Mix ¾ cup of coconut milk with granola. Take half of the mixture and spread at the bottom of an 8×8 Pyrex dish. Place in oven.
2. Combine the remainder of the coconut milk, ice cream and pineapple in a mixing bowl. Mix together until there is an even mixture.
3. Remove bottom crust from the oven. Let cool for 15 min. Add ice cream layer and pat down. Top with remainder of granola mixture. Place in freezer for 1 hour. Cut and enjoy!
