Mint Ice Cream Cupcakes

Ingredients:
1 cup NadaMoo Lotta Mint Chip ice cream
1 cup Love Bean (or melting chocolate of your choice)
1/4 cup unsweetened coconut milk
1 cup crushed mint chocolate cookies

Instructions:
1. Place cupcake wrappers inside a muffin pan. Crush mint chip cookies. Mix together crushed cookies and coconut milk. Put aside.
2. Melt Love Bean chocolate in microwave according to package instructions. Spoon 1 tbsp of melted chocolate into bottom of cupcake. Quickly spoon 1 tablespoon of cookie mixture into each cup and pack down with back of tablespoon. Place in freezer immediately for 30 minutes.
3. Remove ice cream from freezer and allow the pint to soften for 10 min. Spoon 1 tbsp ice cream into each cup and pack down with back of spoon. Place in freezer for 1 hour.
